About the course

The Diploma in Patisserie is designed for students passionate about creating gourmet pastries, signature breads, cakes and specialty desserts. It provides a broad introduction to pastry arts through a mix of practical hands-on training and supporting theory across bakery and pastry production. Students also gain exposure to industry trends, work-based learning (internship) and business-oriented learning to support future career pathways.

What you might learn

Students learn core principles of bakery and pastry operations, building foundational competencies in baking and pastry techniques before progressing to more advanced skill areas. The programme develops professionalism and proficiency to produce pastries and breads to world-class standards, with emphasis on hygiene, nutrition and operational practices. It also aims to broaden employability through business knowledge and structured work-integrated learning via internship.

Career outcome

Graduates can pursue roles in pastry and bakery operations across hotels, restaurants, bakeries, patisseries and related food production businesses. Career pathways listed include Commis Patisserie, Demi Chef de Partie Patisserie, Chef de Partie Patisserie, Boulanger, Chocolatier, Glacier, Pastry Chef and Cake Decorator. With experience, graduates may progress to senior and specialist roles such as Chef Patisserie, Bakery Manager, Pastry Factory Manager, Pastry Sales Professional or Pastry Lecturer.

Entry requirements

SPM / O-Levels / UEC or equivalent with a minimum of 3 credits. Applicants who possess other qualifications will be considered on a case-by-case basis.
